Mānuka Honey Glazed Roast Lamb

Ingredients

Ingredients:

  • 1 leg of lamb

  • 3 cloves of garlic, minced

  • 2 tablespoons fresh rosemary, chopped

  • 2 tablespoons olive oil

  • Salt and black pepper to taste

  • 1/4 cup Manuka honey

  • Juice of 1 lemon

Instructions:

  1. Preheat your oven to 350°F (180°C).

  2. In a small bowl, combine minced garlic, chopped rosemary, olive oil, salt, and black pepper.

  3. Rub the mixture all over the leg of lamb, ensuring it's well coated.

  4. Place the lamb in a roasting pan and roast in the oven for about 1 hour and 15 minutes, or until it reaches your desired level of doneness.

  5. While the lamb is roasting, mix Manuka honey and lemon juice in a small saucepan over low heat until combined.

  6. Brush the honey and lemon glaze over the lamb during the last 15 minutes of cooking.

  7. Remove the lamb from the oven, cover with foil, and let it rest for 15 minutes before slicing and serving. Drizzle any remaining glaze over the slices.
